Paesano Restaurant


THE BUSINESS
Paesano Restaurant is located in Knox City, Melbourne and
services 400 square metres of floor space and 400 seats.
The restaurant employs 40 floor staff and 20 kitchen staff
and is strategically positioned outside the Knox City cinema
complex catering to hungry cinemagoers. On weekends,
1200 customers walk through Paesano’s doors.


WHAT WAS INITIATED?
Paesano Restaurant purchased a wireless point-of-sale
(POS) system called OrderMate. OrderMate’s POS
system allows waiters to place orders using their
wireless, hand-held devices without the need to return to
the bar or kitchen areas, saving time and improving
efficiency. Paesano installed four terminals in the main
restaurant area and one terminal in the pizza area.


HOW THE TECHNOLOGY WORKS
The Ordermate POS system runs on a touch screen
terminal- Waitermate and wireless hand-held Hewlett
Packard PDA device – Pocketmate.

What is a PDA (Personal Digital Assistant)?
An acronym for Personal Digital Assistant. A PDA
refers to any small hand-held wireless device that
provides computing and data storage abilities.

The simple and intuitive screen layout and minimal
input means that staff immediately feel confident using
the POS system – making Ordermate quick to learn
and fast to use. Only 10 minutes of staff training time is
needed for the OrderMate system.
The screen on the hand-held PDA is split into the relevant
sections of drinks and kitchen. Orders entered into
PocketMate are instantly relayed to printers in relevant
preparation areas.
The technology is suited to all restaurant sizes and can
operate 50 metres externally allowing the staff to move
outside the restaurant to take orders.


RESULTS
Paesano’s ‘extra order’ theory affirms that the wireless
ordering system allows the waiter more customer time,
and therefore more time for extra foods and drinks to be
ordered.
Paesano management estimate conservatively that an
additional $48,750 in net sales resulted from floor staff
being in front of customers longer. Increased efficiency
also allows reduced staff hours and customer service
costs amounting to $34,000.
After costs, Paesano’s total return on investment of the
wireless application is $46,682.

COSTS
Paesano invested over $32,000 in upfront costs for
computer hardware, handheld digital assistants, printers
and software licences. Interestingly, training was a low
cost amounting to only $300 and ongoing costs amount to
$4,000 per annum.



CHALLENGES AND PROCESS CHANGE
The implementation of the wireless devices has been very
well received by staff at Paesano restaurant. Staff noted
that customers found the wireless devices to be novel and
a talking point, making their job more enjoyable whilst
improving customer satisfaction.
As Paesano is a large 400 seat restaurant, customers feel
more relaxed and confident in the fulfillment of their orders


FUTURE PLANS
Paesano management plans to introduce a touchscreen,
paperless kitchen system which is likened to a virtual docket
rail. This will also enable waiters to inform customers the
estimated time of arrival for orders!
Home delivery using a Global Positioning System is also
planned in the future, which will automatically optimise the
driver’s route and allow the management to see where the
driver is at any time.
What is GPS (Global Positioning System)?
A system of 24 satellites orbiting the earth at a very high
altitude that transmit continually, which make it possible to
identify earth locations through a receiving unit by
triangulation. In addition to navigation, the system also
provides very precise time and is used in cars, boats, ships
and other transportation vehicles.
